On the sweet Novi’s hills is located Tenuta Merlassino that since 2006 belongs to Azienda Agricola Valditerra.
Novi Ligure, well known for its chocolate
factories: Pernigotti, Novi, etc... is also famous for its Gavi wine. The most famous and prestigious Genova families
have built wonderful palaces, villas, and castles on these hills, surrounded by beautiful vineyards.
Our vineyards have a wonderful full-sun location. In addition the windy position protects the grapes from diseases like pernospora or oidium.
The cellar is located 3km from the vineyards.
The grape harvest occurs at the end of September or early October. The grapes are stored in cases of 3kgs. After the fermentation and the pouring off, there is the stabilization (without chemical additives).
The wine is maintained at a temperature of -4C for 20 days. After a month our Gavi is ready to accompany our typical dishes like Corestti (thin pasta with mushroom sauce or sausages) or Agnolotti.
The best dish to cook with Gavi is always the stockfish or with a local sweet of Novi put into the wine.
For a cocktail nothing is better than a glass of Gavi with Novi's famous Focaccia (igp) that is a sort of bread with olive oil and onions.

Our Gavi is vinified from grapes of exuberant young vineyards located in the heart of Monterotondo of Gavi; their perfectly balanced aging lends the wine its typical fresh, dry taste. This "Great White," which has become a Classic on the Italian wine scene, produced in a complete accord which is now a century-old tradition, represent the true essence of Gavi wine.

Vinification: Traditional, with temperature control.

Best consumption period: At any time, without problems of duration.

Palate: Delicate, excellent ripe fruit on palate, very concentrated and persistent.
